These are the best cookies--and they're naturally gluten free and dairy free too.
Stir together 1 cup peanut butter, 1 cup sugar, and 2 eggs. Drop by spoonfuls onto a greased (or parchment papered) cookie sheet. Bake in a preheated 350° oven for 10 minutes or so.
These are great with chocolate chips stirred into them. I've also made them with almond butter. I think almond butter with sweetened dried cranberries and white chocolate chips would be divine (although they wouldn't be dairy free then. We have yet to find a dairy free white chocolate).
